At Ratnagiri, the coffee cherries used for this Micro lot are meticulously hand-picked by skilled workers. Only the dark red cherries at the peak of ripeness are selected, ensuring the highest quality. These cherries then undergo a thorough hand-sorting process to remove any under ripe or overripe cherries, guaranteeing that only the finest cherries are used. To further enhance the exceptional flavors of this coffee, a unique fermentation process takes place. The coffee cherries are placed in stainless steel tanks, where freshly cut pineapple fruit is added. By removing all the oxygen from the tank and replacing it with CO2, cherries undergo carbonation maceration for 72 hours. This innovative technique imbues the coffee with distinct and delightful flavors.
After fermentation, the coffee is carefully dried on African beds under shade for 28 days. During this period, the coffee is meticulously turned and raked every few hours, ensuring even drying and optimal flavor development.

The dry aroma of the coffee is rich and intense, with delightful notes of dark fruits like plum, grapes, and jaggery undertones.
